Azubutter 300 g, Premium Vegetable Shortening
Vegetable shortening for softening sugar paste, fondant, and pastillage.
Azucren's 300 g Azubutter is a white vegetable shortening intended for professional cake design, designed as a European alternative to imported vegetable shortenings from outside the EU. Free from trans fats and partial hydrogenation, it softens and lubricates sugar paste, fondant, pastillage, and gumpaste. Its creamy texture remains stable at room temperature, with no refrigeration required. The 300 g airtight jar is suitable for regular workshop use.
Technical specifications
Recommended uses
- Softening hardened or dry fondant and sugar paste
- Lubricating the work surface for laminating and rolling out
- Greasing the cutting edges of cookie cutters for clean cuts
- Working with gumpaste and sugar flowers: work surface, veiners, modeling tools
- Demolding chocolate molds, cake pops, and pastillage pieces
How to use it
To soften hardened fondant: take 5 to 8 g of Azubutter per 500 g of dough, warm it slightly between your hands, then incorporate it by kneading vigorously until the dough becomes soft and elastic again. Adjust the quantity according to the initial hardness, without exceeding 2% of the dough's total weight, or a maximum of 10 g per 500 g.
For laminating, grease the work surface with a very thin layer, 2 to 3 g for 40 x 40 cm, using absorbent paper in circular motions: the fondant detaches effortlessly without any residue of starch or powdered sugar.
For cookie cutters, apply a trace of Azubutter with a dry brush to the cutting edges before cutting: the shapes release without deformation, which is useful for fine patterns and slender letters.
Professional dosages by use
| Softening standard fondant | 1% of the dough's weight, or 5 g per 500 g |
| Softening very hardened fondant | 2% maximum, or 10 g per 500 g |
| Greasing a 40x40 cm work surface | 2 to 3 g, ultra-thin layer |
| Greasing a 50x50 cm work surface | 3 to 4 g, in concentric circles |
| Greasing cookie cutters | A brush stroke, cutting edges only |
| Demolding chocolate molds | Thin coating applied with a soft brush |
Patissland tip
Golden rule: never exceed 2% of the dough's weight for softening; beyond that, the greasy effect becomes visible and harms the finish. Keep Azubutter at room temperature: refrigeration makes it excessively hard and complicates its use.

Frequently asked questions
What is the difference between Azubutter and a standard imported vegetable shortening?
Azubutter offers guaranteed EU regulatory compliance: 0% trans fatty acids, no partial hydrogenation, compliant with WHO and EFSA recommendations, with stable distribution in France without import restrictions.
Should Azubutter be refrigerated after opening?
No. Cold excessively hardens the product and makes it difficult to use. Keep the container tightly closed at room temperature, between 18 and 22°C.
How much should be used to soften 1 kg of very hardened fondant?
Start with 10 to 15 g, knead for 3 to 5 minutes, let rest for 10 minutes, then reassess. Add more only if necessary, without exceeding 20 g in total, or 2% of the paste's weight.
