Frequently asked questions
What can replace bitter almond flavoring?
Depending on the recipe, almond paste or a nut extract can provide a similar note, but with different dosing and texture. The flavoring remains the most precise solution for a distinct note without adding fat or sugar.
How many drops for 1 kg of preparation?
Approximately 6 drops, or 0.2 g/kg. This is a starting point: adjust according to the desired intensity and taste before serving.
Can it be used in a baked dough?
Yes, it withstands short baking times well (biscuits, financiers, macarons). For longer baking times, it is best incorporated into creams or fillings added after baking.
