Agar Agar - Vegetable Gelling Agent 50 g
100% plant-based gelling agent extracted from red algae, a vegan alternative to gelatin
FUNCAKES agar agar is a plant-based gelling agent (E406) extracted from red algae, with no added flavor or color. It gels when heated and sets within a few minutes at room temperature, unlike animal gelatin, which requires refrigeration. Used in panna cotta, mousses, jams, mirror glazes, and entremets inserts, it is suitable for vegetarian, vegan, halal, and kosher diets.

Frequently asked questions
Can gelatin be replaced with agar agar in a recipe?
Yes, but the quantity must be adjusted: agar agar's gelling power is approximately 8 times greater than gelatin's. Divide the specified amount of gelatin by 6 to 8 and follow the cooking step, which is essential to activate the setting process.
Why does my agar agar preparation set before it even reaches the refrigerator?
This is normal: unlike gelatin, agar agar sets as soon as it cools below 35 to 40 °C, within a few minutes at room temperature. Work quickly once cooking is complete, before it sets in the cooking vessel.
Is agar agar suitable for vegan desserts?
Yes, it is a 100% plant-based gelling agent extracted from red algae, with no animal-derived ingredients, and is suitable for vegetarian and vegan diets.
