Tinned Copper Canelé Mold
Caramelized crust and tender center, in three diameters
Tinned copper canelé mold, chosen for the contrast that defines the Bordeaux canelé: a caramelized, crisp crust surrounding a tender center. Copper's high conductivity distributes heat quickly and evenly, caramelizing the sugars consistently without hot spots. The tinned interior ensures safe food contact and easy release.

Use
- Season the mold before the first bake: apply melted butter and beeswax inside, heat in a hot oven for a few minutes, then wipe clean
- Coat the molds with this mixture before each batch
- Fill with rested canelé batter, then place in a very hot oven to set the crust before lowering the temperature
- Turn out the canelés while still hot to preserve their crispness
Please note: the tin lining is delicate; never scrape the interior or use an abrasive sponge. Copper does not tolerate prolonged moisture: hand-wash only, never use a dishwasher, and dry immediately to prevent oxidation.

Frequently asked questions
Why choose copper for canelés?
Its conductivity distributes heat quickly and evenly, creating the thick, caramelized crust typical of Bordeaux canelés, which is difficult to achieve with a less conductive mold.
Does the mold need to be seasoned before use?
Yes. Seasoning with butter and beeswax before first use protects the tin lining and improves release from the very first batches.
Can it go in the dishwasher?
No. Tinned copper must be hand-washed and dried immediately. Dishwashers and harsh products damage the tin lining and dull the copper.
