Saracino - Wafer Paper

Wafer Papers / White Wafer Sheets

Food-grade A4 wafer paper, available in two thicknesses.

Saracino wafer paper is an edible sheet made from potato starch and water, neutral in taste and odor. In the standard A4 format (21 x 29.7 cm), it is used as a nonstick support in confectionery and as a decorating material in cake design.

Recommended uses

  • Nougat and calisson base: 0.3 mm thickness, placed at the bottom and on top of the mold.
  • Baking support for delicate items (macarons, thin shortbread), as an alternative to parchment paper.
  • Cut and shaped 3D decorations (flowers, butterflies): 0.6 mm thickness recommended for shape retention.
  • Printing with edible inks on a dedicated printer: 0.3 mm thickness.

Please note: store away from moisture, heat, and direct light in an airtight container. Made with potato starch and water, gluten-free, egg-free, dairy-free, soy-free, nut-free, and non-GMO. Place wafer-paper decorations on the cake as late as possible before serving, as moisture gradually softens them.

Frequently asked questions

Is wafer paper edible?

Yes, it consists only of potato starch and water. It is easy to digest and melts in the mouth within a few seconds.

Can it be used instead of parchment paper?

For gentle baking at temperatures up to approximately 180 degrees and for delicate items, yes. Above 200 degrees, wafer paper may brown; classic parchment paper is preferable.

Which thickness should I choose for 3D flowers?

The 0.6 mm thickness is more rigid; lightly moisten it, then shape it and leave it to air-dry for 30 minutes to 1 hour.
