Oil-based coloring for chocolate, ganache, and high-fat preparations.
Colour Mill Emerald is a concentrated, oil-soluble food coloring in a 20 ml dropper bottle. Its oil-based formula blends directly into chocolate, cocoa butter, ganache, and rich creams without causing the mixture to seize. Ingredients and allergens
Ingredients: Humectant: E422, vegetable oil (rapeseed), colors: E102, E133, emulsifiers: E322, E433.
Please note: This coloring is oil-soluble and will not dissolve in water-based preparations (royal icing, syrup). Shake the bottle before use and add the color gradually: it is easier to darken a shade that is too light than to lighten a base that is already too dark. Store away from light and heat, with the bottle tightly closed.
Warning: E102: may have adverse effects on activity and attention in children.
Frequently asked questions
Can it be used to color cocoa butter for velvet spray?
Yes, Emerald disperses well in melted cocoa butter and can be used to prepare a mixture for spraying with an airbrush. Test the shade on a neutral surface first.
Will the color withstand baking in the oven?
Emerald is primarily intended for preparations that are not baked after coloring (chocolate, ganache, icing, buttercream). In baked dough, the color may fade slightly depending on the temperature and baking time.
Can I make the Emerald shade darker if needed?
Yes, add the coloring gradually, one drop at a time, mixing between each addition: it is easier to darken a shade that is too light than to lighten a base that is already too dark.
