Sosa - Technical Sugar
Powdered Dextrose - 650 g
Anti-crystallizing sugar derived from corn, for ice creams, sorbets, and confectionery.
Sosa Powdered Dextrose is a technical sugar of plant origin (corn), with high anti-crystallizing power (PAC 172%) and reduced sweetening power (POD 74%) compared with sucrose. It stabilizes the texture of ice creams and sorbets against crystallization and allows you to adjust a recipe’s sweetness without adding excessive sugar.

Frequently asked questions
Why is dextrose useful in ice cream making?
Its anti-crystallizing power (PAC 172%) is significantly higher than that of sucrose: it limits the formation of ice crystals and ensures a smooth, melting texture, even after several weeks in the freezer.
Is dextrose as sweet as regular sugar?
No, its sweetening power is lower (POD 74% compared with 100% for sucrose), allowing you to adjust a recipe’s sweetness without altering its texture.
Can dextrose be used in a vegan recipe?
Yes, it is certified as compatible with vegetarian and vegan diets, as well as kosher and halal requirements.
